Nasi lemak Bunga Telang

Assalamualaikum and hello.I'm actually lazy to even blogged but at same time kesian tengok my page hanging...well if I really have time or mostly rajin I'll do it. Mostly share everything on Instagram which is super easy...

So on my recent project work friend brought this flower/bunga for me..for me to experiment on my projects that coming up Insha'Allah.. my friend have a tree that never stop growing and she barely don't know what to do with it...So, I decided to make this.

I only take a palm of my hand and boil it to get that colour. You can also soak it but the colour would be very much light. I have done the soak version I wasn't that fond with the colour. I really love this one. Its Just perfect..and I use basmati..

Basic ingredients needed to prepare Nasi Lemak; Lemongrass/Serai, onion, ginger, anise seed, cinnamon stick, cardamom pods,  dried chili, peanuts, anchovies, hard boiled egg, cucumber, basmati, coconut milk/santan

3 cups uncooked rice
1 stalk lemongrass, smashed
pandan leaf, tied
2 tbsp fenugreek seed
2 medium onion, sliced
4 cloves of garlic, sliced
2 inch ginger, chopped
1 cup of thick coconut milk
1 cinnamon stick
1 cardamom pods
2-3 cloves
2 anise seed

I would suggest you to mix your thick coconut into the blue pea extract. So your rice won't be watery or squishy.

Preparing the coconut rice:

Just like cooking normal  rice in rice cooker, rinse your rice and drain. Add the coconut milk+blue pea extract, fenugreek, lemongrass, onion, garlic, ginger a pinch of salt, and some water. Add the pandan leaves into the rice and cook your rice.

Dried anchovies sambal:

1 cup dried chilis (washed, rinse)
5 cloves of garlic
3 medium onions
1 teaspoon of belacan (prawn paste)
1 inch ginger
1/4 teaspoon of salt
2 tablespoon of sugar
1 cup of dried anchovies (washed, rinsed)
Tamarind pulp, small size

Other ingredients:
Fried anchovies
Hard boiled egg
fried chicken

Italian bread

Woke up to the smell of fresh loaf.😍
My late Mum, used to make it like almost weekly fresh loaf, so many types. We always look forward to it.
Last night after our trip to planetarium and jumanji. When we pass by the bakery shop Abraham said rindu bread tok umi. Mama buat lah. Yes, of course we all missed her food, love instead buying gardenia. I asks abraham nk bread apa? Dia replied mcm tok umi punya.πŸ˜‚..
Umi klu bake bread mmg unique sbb dia hardly make white loaf. She always make healthy loaf like oats, rye, flaxseed, carrot etc etc...
I still have to learn more in making it. But for now I'm really enjoying this Italian herbs bread. The crust is slightly tough but in the inside its soooo soft!

I found this recipe on pinterest. its actually very delicious and i love the taste of it and it goes perfectly with peanut butter.

3 cups all-purpose flour
1 package yeast (rapid-rise recommended)
1 tsp sugar
1¼ cups warm water
2 tbsp extra virgin olive oil
1½ tsp garlic salt
1 tsp dried oregano
1 tsp dried basil
2 tsp Italian seasoning
1 tsp dried parsley

In a large bowl, combine the olive oil with water, yeast and salt. Let it sit for five minutes. Mix the herbs and sugar into the flour.
Stir in the flour mixture until the dough is stiff enough to knead. Add the flour a little bit at a time. Three cups flour is an approximate amount, your exact amount may vary. slightly
Knead the dough until it is smooth and elastic–just a few minutes.
Place dough in a greased bowl; cover and let rise until the dough has doubled. (about 45 minutes)
Form the dough into an oval free-form style loaf and place on greased baking sheet. (Dust baking sheet with flour first if desired and make slits in the top of the loaf for a nice finish when done.) Place immediately in a 375ΒΊ F oven. Do not preheat the oven, the bread will rise some more as your oven heats up. Bake for 30-40 minutes.
Note: if you use fresh herbs, triple the amounts shown in the ingredient list

So usually in my house open house will be having briyani johor, chicken briyani gravy johorian style too. Because myself is Johorian. And this mutton varuval is always available during raya.

I usually will asks the butcher to cut the meat to bite size for easier work. So, I don't have to come home and do all this extra work.

Mutton Varuval recipe:

1kg Mutton (preferably boneless) cut bite size.
2 big Onion, sliced
10 Dry Red Chillies
2 tbsp Ginger-Garlic paste
3 tbsp. Crushed Black Pepper
2 tbsp Cumin Powder
2 tsp Salt (adjust to taste)
1 1/2 cup Water
1/2 cup Oil

1. Clean the mutton throughly with tumeric to remove the excess smell (3 times). Drain water, set aside.

2.  Add the oil. Once the wok started to warm up add the sliced onions. Tear the red chilies and add them too. Add in curry leaves too.  2 or 3  spring of curry leaves.

3. Sauteed the onion until it brings out the fragrant and slightly brown. Add in the ginger and mix it well.

4. Add in the pepper, cumin and salt to the mutton and combine well.

5.  Add in the mutton into the wok and cook together and add the water. Cover the wok with a lid to let it cook for 10 minutes. To soften the meat.

6. Let it cook until the gravy thickens to an almost dry consistency. Serve with warm rice, raita and pair with papadom would be a perfect dish! walla..
