Time flies, as Ramadhan is soon leaving us..& Eid its just around the corner, just to let you'll know next week I won't be around until 13th august..I'm going to celebrate my Eid in Kedah this year for the first time :)

A really simple, quick and amazingly tasty pasta dish which always taste fantastic.

Mediterranean Style Pasta.

500 g dried linguine
dash of sea salt
fresh ground black pepper
2 cloves of garlic, peeled & finely sliced
1 fresh red chili, chopped
1 tablespoon paprika
1 small bunch of parsley, finely chopped
1kg sirloin
1 cup button mushroom, finely sliced

Method :

Add the linguine to a pan of boiling salted water and cook according to packet instructions.

Meanwhile, put a large frying pan on a high heat and add a few good drops of olive oil. Add the garlic, chilli, paprika and parsley. Cook for  few minutes until just starting to give some colour. Add the sirloin to the pan and cook for 4 minutes. Add the tomatoes.

Transfer the cooked linguine straight into the frying pan, bringing a little of the cooking water with it. Add the butter, if using, and toss everything together in the pan. Have a taste, season with salt and pepper, add most of the parsley leaves and a drop of extra virgin olive oil. mix all together  – then transfer to a large platter. garnish over the remaining parsley leaves.
