Tomato Rice

I always told my hubby that I loved having my family always with me at all times.. I guess what I've wished had come true. Thank you Allah for granted my wishes.

Yesterday was indeed a blessed day for me as now that my parents stayed with us.. All my siblings get together at my humble nest... And most of you know how much I loved having people at my house..cooking, chatting and in the end its all about having good food with the people you loved.


So yesterday, we cooked tomato rice, dry curry prawn, lamb in chili, tomato gravy/kambing masak merah..we all having fun in the kitchen cooking together mum, me, sister in law and my elder sister;



Look at this delicious, juicy dry curry prawn! Its just so amazing with flavors!



Preparing your tomato rice its so easy and plus it's delicious :) 

Ingredients: 

8 cups uncooked rice (washed) 
1/4 cups chopped cilantro
1/2 cup fresh milk
1 canned tomato puree
2 fresh chopped tomatoes
Pinch of salt
2 tbsp butter
1 cinnamon stick
2 anise seed
3 cloves
1 medium onion, chopped


Method:

1. First wash your uncooked rice, rinse and drained it. Turn on your rice cooker, add in the butter, cinnamon, anise seed. Once the butter has melted, add in onion and give it a good stir. 

2. Secondly, add in chopped tomatoes, tomato puree and mixed it until well combined. Pour in the milk and cilantro together and let it boil for about 1-2 minutes. 


3. Add in the rice that has been drained out into the rice cooker. Let the rice cook by itself until the button cook turn to keep warm.

Note: 8 cups of rice able to serve up to 14 people
